Why is this Coffee our favourite ?

If you have been following our socials or emails lately you may have noticed all we can do is rave about our Ethiopian Bale Mountain Anaerobic Coffee, it is a pleasure to roast and brew and definitely the most unique cup we have experienced. So here is some in depth information on what makes this coffee amazing. 

Nestled in the Bale Mountains belt in Arsi, Ethiopia, lies the picturesque Bale Mountain Farm. Situated in the southeastern part of the Ethiopian Highlands, at an elevation of 1,800 - 2,100 meters above sea level, this farm is a hidden gem that employs 350 dedicated staff at the Dry Mill and the nearby Solena Washing Station. Accessible only through challenging roads, the farm is surrounded by two majestic rivers that flow into the Wabe Shebelle River and Forest Mountains. The coffee harvested from this farm is renowned for its exceptional density and uniformity, consistently delivering a top-tier cup profile.

Apart from its exceptional coffee, Bale Mountain Farm is deeply involved in social responsibility initiatives. From constructing local roads to establishing nurseries and distributing coffee seedlings for free, the farm is committed to supporting the community. Additionally, they contribute to building schools and provide financial assistance during the off-season, showcasing a strong dedication to the well-being of their surroundings.

One of the standout features of Bale Mountain coffee is the anaerobic fermentation process used in its production. This method enhances the acidity and fruity notes that are characteristic of coffees from this region. The result is a distinct cup profile with refreshing Fruit notes and a hint of Herbiness that captivates coffee enthusiasts.

In Ethiopia, the adoption of anaerobic processing has been on the rise, adding complexity to the flavor profiles of coffee beans. While typically associated with countries like Costa Rica and Colombia, its integration in Ethiopia reflects a growing trend of experimentation to showcase the diverse flavors of Ethiopian coffee varieties. As the coffee industry in Ethiopia continues to evolve, the anaerobic fermentation process provides a unique opportunity for coffee lovers to experience the rich and intricate taste profiles of this renowned coffee origin.

Bale Mountain is home to a myriad of coffee varietals, predominantly heirloom types that are indigenous to Ethiopia. The genetic diversity in this region makes it challenging to pinpoint specific varietals, as local farmers cultivate ancient heirloom varieties that have adapted to the microclimates of the area. These heirloom varietals are prized for their floral, fruity, and wine-like flavor notes, adding to the allure of Bale Mountain coffee. Despite the difficulty in identifying individual varietals, the exceptional quality and vibrant flavors of Bale Mountain coffee are a testament to the region's unique characteristics shaped by altitude, soil composition, and traditional farming techniques.
