Produced by Gustavo Vargas on his La Victoria farm in Pueblo Bello, Sierra Nevada, this Castillo lot reflects both a deep-rooted connection to coffee farming and a passion for innovation. Raised in a family of coffee producers, Gustavo combines generations of agricultural knowledge with a meticulous approach to processing, producing coffees that showcase the unique character of the Sierra Nevada region.
Following careful cherry selection, ripe cherries were fermented aerobically for four days in traditional fique sacks under carefully monitored temperatures. The coffee was then mechanically dried over five days, with drying temperatures gradually increased to achieve optimal moisture content while preserving clarity, sweetness and complexity in the cup.
Expect a smooth, comforting cup with notes of fresh cherries, vanilla and subtle hints of tropical fruit and wine.
