Under the guidance of the RENACER field school, the farm focuses on restorative soil health and precision agriculture, ensuring exceptional quality while empowering local producers with sustainable farm practices.
This lot was carefully selected at peak ripeness before undergoing a controlled anaerobic fermentation process to amplify its fruit-forward complexity. The cherries were then meticulously dried on specialised beds at the central Beneficio San Rafael mill, located between the peaks of El Pilon and Cerro Aguila, ensuring strict quality control from harvest to final export.
Expect a bright, highly expressive cup featuring crisp notes of white grape, balanced by a rich brown sugar sweetness and a unique, refreshing tonic-water lime finish.
