The farm is owned and run by small holders, each small holder owns a share of this Finca located at Motozintla, this one of
the notworthy Finca’s of the group of farms in this region located in the state of Chiapas, Mexico. Cascadas is named for the
many waterfalls around the finca, nevertheless for long time it was called by the previous owner, Finca Bélgica, but this Finca
was forgotten for many years and was then taken over by a group of dedicated smallholders, who have improved the soil and
the harvesting techniques which impact the coffee quality. After this success smallholders decided to take over sister farms in
the surroundings of Motozintla, Chiapas, and as a result a farm that was not known for quality coffee , became COE winner
in the span of 3 years, therefore some producers need to be taken serious. Not only do we think that these smallholders are
seeking to produce quality coffee in this area, but they’ve taken to initiatives to produce special process like naturals.
This coffee is produced using the washed process, coffee of the regions offers distinguished fruitiness in the cup, therefore
some smallholders are specialised in special preparations like naturals. These special techniques improved from 2018 when a
specialty coffee importer requested a natural lot from this Finca, hence producers take care of the flavour profile
independently if the coffee is processed washed or differently . The forward thinking doesn’t stop at coffee processing, the
region have social development projects going on, for the people who live in the surrounding areas. Their main operations
outside of coffee are the Ichthus School, a boarding school for underprivileged children, affordable financing offered to
producers, and working with the community and government leaders to improve infrastructure, education, and health. These
operations are funded by the government and the sales of their coffee.
