Idido - Anaerobic Natural

Produced by Girma Tamiru in Idido, Yirgacheffe, this anaerobic lot is supplied through Ephtah Specialty Coffee, who work to build sustainable and collaborative supply chains across Ethiopia. The coffee is grown by nearby smallholder farmers under the shade of false banana trees, with local heirloom cultivars harvested between November and January.
For this anaerobic process, carefully selected coffee is fermented in plastic barrels for nine days before being dried for 12 to 15 days. The coffee is then stored at the site warehouse before being transported to Addis Ababa for export preparation. Despite challenging weather conditions and unusually high rainfall during the drying period, careful processing and quality control help preserve the character and consistency of this lot.
Expect an intense and juicy cup with notes of dark grape, sour cherry and pineapple, followed by whiskey and dark chocolate.
