Produced by Robinson Rivera on his El Silencio farm in Piendamó, Cauca, this Castillo lot showcases the careful processing and innovation championed by the ACC cooperative. Growing coffee for 18 years and working alongside ACC for the past five, Robinson cultivates coffee at elevations between 1,700–1,850 masl.
This naturally processed lot undergoes 48 hours of tank fermentation before being dried in silos at controlled temperatures. Drying is carefully paused and adjusted throughout the process, followed by a final resting stage in sealed barrels before finishing in a parabolic dryer. The result is a fruit-forward and expressive cup with layered sweetness and clarity.
Expect ripe berry, tropical fruit, and dark chocolate, with a rich sweetness and smooth finish.
