As you might have noticed, we always try to have two Brazilian coffees on offer at the same time. This is because we wanted our most popular origin to showcase the complexity, contrast and diversity that coffee (even from the same origin) can have. As a general rule, we aim for one that is more progressive and fruit-forward in flavour, while the other tends to be more traditional with a strong base of chocolate and nut flavours. This time around we are trying something a little bit different and have found a coffee that seeks to bridge that gap and offer the best of both worlds.
Flavio Ruiz Pequini is originally from Sao Paulo, Brazil however, he has spent the last 35 years working on his coffee farms in the Cerrado region of Brazil. He originally started his career as an environmentalist working in reforestation in 1886, he acquired the first of his own land and began producing coffee. While his priorities have shifted towards managing his farms and producing high-quality coffee for the specialty market, his time spent in environmental work gave him the mindset and skillset to manage his farm in an environmentally conscious and sustainable manner.
This coffee combines red fruit and chocolate to offer a perfectly balanced coffee that will please all taste buds. The red fruit comes to the forefront with notes of raspberry and pomegranate while the classical chocolate notes of Brazilian coffee are also present in the cup. Heavily filtered brews (like a Chemex for example) will offer up more acidity and highlight more of the fruit on the coffee, while unfiltered brew methods such as French Press or Espresso will let the chocolate flavours be the star player.
